01:48 pm - martha in training... 'Righteous Roti' So, as you all(meaning my alter-egos/imaginary friends) may or may not know, I love cooking. A lot. I came up with a fantabulous recipe for chickpea roti one day while I was having an extreme indian food craving. I swear on my life it tastes sooooo good. Myes.
I'm not exactly sure about the amounts of ingredients... Just wing it.
2 tbsp olive oil 3 cloves of garlic 1/2 onion 1/2 tbsp curry powder 1/2 tsp celery seed 1/4 tsp cinnamon 1/2 tsp black pepper
Combine said ingredients in skillet over med heat. Sweat the garlic and onions sufficiently. Meanwhile, boil 3 med potatos until soft.
Drain 1 can of chickpeas, save the liquid.
Add chickpeas to skillet, with 1/3 of the liquid
Mash 1 potato, cube the other two. Add mashed potato and mix in thoroughly. Add cubed potatos. Add 1 cup frozen yellow corn kernels. Mix.
Add salt to taste.
Once corn is sufficiently defrosted, divide and wrap the chickpea mixture in flatbread/tortillas/whatnot.
Bite it.
Chew it.
Swallow it.
Sip water.
Repeat.
